Black Bean Chili

Ingredients
- 2 tsp olive oil
- 2 tsp minced garlic
- 1⁄4 cup green bell pepper, diced
- 1⁄4 cup red bell pepper, diced
- 1⁄4 cup white onion, diced
- 1 lb extra lean ground beef or turkey
- 1 can petite diced tomatoes
- 1 can diced tomatoes and green chiles 1 can black beans
- 2 Tbsp tomato paste
- 2 Tbsp chili powder
- 2 tsp cumin
- 1⁄4 tsp salt (optional)
Directions
- Add olive oil to large stockpot over medium high heat, add garlic, peppers, and onion.
- Stir frequently until softened, approximately 2-3 minutes.
- Add ground beef or turkey to the stockpot and cook until browned.
- Add the last 6 ingredients to the pot, stir, and cover.
- Simmer for 20 minutes.
