Black Bean Chili

Ingredients

  • 2 tsp olive oil
  • 2 tsp minced garlic
  • 1⁄4 cup green bell pepper, diced
  • 1⁄4 cup red bell pepper, diced
  • 1⁄4 cup white onion, diced
  • 1 lb extra lean ground beef or turkey
  • 1 can petite diced tomatoes
  • 1 can diced tomatoes and green chiles 1 can black beans
  • 2 Tbsp tomato paste
  • 2 Tbsp chili powder
  • 2 tsp cumin
  • 1⁄4 tsp salt (optional)

Directions

  1. Add olive oil to large stockpot over medium high heat, add garlic, peppers, and onion.
  2. Stir frequently until softened, approximately 2-3 minutes.
  3. Add ground beef or turkey to the stockpot and cook until browned.
  4. Add the last 6 ingredients to the pot, stir, and cover.
  5. Simmer for 20 minutes.
